Vegetarian Empanadas Recipe

Empanadas are delicious pastries that originate from Latin America, known for their flaky crust and savory fillings.   • 1 egg, beaten (for egg wash, optional)

Instructions:

Step 1: Prepare the Dough
In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water until the dough comes together. Wrap it in plastic and refrigerate for at least 30 minutes.

Step 2: Make the Filling
In a large skillet, heat olive oil over medium heat. Sauté the onions and garlic until translucent. Add the bell peppers and mushrooms, cooking until softened. Stir in the spinach, cumin, smoked paprika, salt, and pepper, cooking until the spinach wilts. Remove from heat and let it cool.

Step 3: Assemble the Empanadas
Preheat your oven to 400°F (200°C). Roll out the chilled dough on a floured surface until about 1/8 inch thick. Cut circles using a biscuit cutter or a glass. Spoon a tablespoon of filling onto one half of each circle. Fold, seal the edges, and crimp with a fork. Place on a baking sheet lined with parchment paper. Brush with beaten egg for a golden finish.
