Ingredients
- 3 medium zucchinis, sliced thinly
- 1 pound ground beef or turkey
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce (sugar-free)
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the ground beef or turkey, season with salt and pepper, and cook until browned. Drain excess fat.
- Add marinara sauce to the meat mixture and stir well. Let simmer for about 5 minutes.

- Repeat the layers: meat sauce, zucchini, ricotta, and top with the remaining mozzarella cheese.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden brown. Let it cool for a few minutes before slicing and serving.
