Keto Zucchini Lasagna Recipe

Ingredients
- 3 large zucchinis
- 1 pound ground beef (or turkey)
- 1 cup ricotta cheese
- 2 cups marinara sauce (sugar-free)
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Start by preheating your oven to 375°F (190°C).
- Wash the zucchinis and slice them lengthwise into thin strips, about 1/4 inch thick. Lay the slices on paper towels and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture.
- In a skillet, heat the olive oil over medium heat. Add the ground beef, garlic powder, Italian seasoning, salt, and pepper. Cook until the meat is browned, then drain any excess fat.
- In a separate bowl, mix the ricotta cheese with half of the mozzarella cheese and a pinch of salt.
- To assemble the lasagna, spread a thin layer of marinara sauce on the bottom of a baking dish. Layer with zucchini strips, followed by the meat mixture, ricotta mixture, and more marinara sauce. Repeat the layers until all ingredients are used, finishing with a layer of marinara sauce on top.
- Sprinkle the remaining mozzarella cheese over the top layer and cover the dish with aluminum foil.
- Bake the lasagna for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
