- 1 pound fresh green beans, trimmed

- 2 cloves garlic, minced
- 1/4 cup olive oil or butter
- 1 teaspoon soy sauce (or coconut aminos for a soy-free version)

- 1 cup pork rinds, crushed (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil and blanch the green beans for about 3-4 minutes. Drain and set aside.
- In a large skillet, heat the olive oil or butter over medium heat. Add the onions and sauté until translucent, about 3 minutes. Then add the garlic and mushrooms, cooking until the mushrooms are soft.
- Pour in the heavy cream and stir in the soy sauce. Allow it to simmer for 5 minutes until it thickens slightly. Add the cheddar and Parmesan cheese, stirring until melted and well combined.

- Transfer the mixture to a greased 9×13-inch baking dish. If you prefer a crunchy topping, sprinkle crushed pork rinds on top.
- Bake in the preheated oven for 20-25 minutes or until bubbly and golden brown.
