Indulging in dessert doesn’t have to mean sacrificing health or dietary restrictions. This Gluten-Free Strawberry Cheesecake is easy to make, deliciously creamy, and bursting with the fresh taste of strawberries. Perfect for any occasion, this recipe will satisfy your sweet tooth while catering to gluten-intolerant guests.
Ingredients
- For the crust:
- 1 ½ cups almond flour
- ¼ cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- ¼ teaspoon salt
- For the cheesecake filling:
- 16 oz cream cheese, softened
- ½ cup sugar or coconut sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- For the strawberry topping:
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons sugar (optional)
- 1 tablespoon lemon juice
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a bowl, mix almond flour, melted coconut oil, honey, and salt until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10-12 minutes or until lightly golden. Allow it to cool.
- Make the cheesecake filling: In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream until smooth and creamy.
- Bake the cheesecake: Pour the filling over the cooled crust. Bake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour. This will help prevent cracks.
- Prepare the strawberry topping: In a bowl, combine sliced strawberries, sugar, and lemon juice. Let it sit for about 10 minutes.
- Chill and serve: Once the cheesecake is cooled, refrigerate for at least 4 hours or overnight. Top with the fresh strawberry mixture before serving.
This Gluten-Free Strawberry Cheesecake not only caters to dietary needs but also brings a fresh, fruity flavor that everyone will love. Perfect for gatherings or a simple night in, it’s an article of delight on any dessert table!
