Why Gluten-Free?

Whether you have celiac disease, a gluten sensitivity, or are simply looking to reduce your gluten intake, these muffins are a fantastic option. We use a blend of gluten-free flours to create a texture that’s surprisingly similar to traditional muffins – you won’t even miss the wheat!

Ingredients:

  • 1 ½ cups gluten-free all-purpose flour blend (ensure it contains xanthan gum)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups shredded carrots
  • ½ cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the brown sugar, granulated sugar, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the shredded carrots and nuts (if using).
  6. Fill each muffin liner about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Tips and Variations:

  • For extra moisture, add ¼ cup of unsweetened applesauce.
  • Add raisins, chopped pineapple, or shredded coconut for added texture and flavor.
  • Consider a cream cheese frosting for a more decadent treat.
  • Store the muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
