Gluten-Free Cashew Chicken Recipe

Craving delicious cashew chicken but avoiding gluten? Look no further! This recipe delivers all the savory, nutty goodness you love, without the wheat. It’s quick, easy, and perfect for a weeknight dinner.

Why This Recipe Works:

Traditional cashew chicken often relies on soy sauce and flour-based coatings, both of which contain gluten. This recipe cleverly substitutes gluten-free alternatives to maintain the authentic flavor and satisfying texture. We use tamari, a gluten-free soy sauce alternative, and tapioca starch for a light and crispy chicken coating.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup tapioca starch
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup cashews
  • 1 red bell pepper, chopped
  • 2 green onions, chopped

For the Sauce:

  • 1/4 cup tamari (gluten-free soy sauce)
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1 clove garlic, minced

Instructions:

  1. In a bowl, toss the chicken pieces with tapioca starch, salt, and pepper.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Add the cashews to the skillet and toast for a few minutes until lightly golden. Remove the cashews and set aside.
  4. Add the bell pepper to the skillet and cook until softened, about 5 minutes.
  5. In a small bowl, whisk together all the sauce ingredients.
  6. Pour the sauce into the skillet with the bell pepper and bring to a simmer.
  7. Add the cooked chicken and toasted cashews to the skillet and toss to coat.
  8. Garnish with green onions and serve over rice or cauliflower rice.

Tips and Variations:

  • For extra flavor, add a pinch of red pepper flakes to the sauce.
  • Feel free to substitute other vegetables, such as broccoli or carrots.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
