Ingredients:
- 4 large bell peppers (any color)
- 1 cup cooked brown rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 carrot, diced

- 1 (15 ounce) can black beans, rinsed and drained

Instructions:
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, zucchini, and carrot and cook for another 5 minutes, or until slightly tender.
- Stir in diced tomatoes, black beans, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
